  • Green chili- one or two (minced with no seeds)
  • Ground cumin- one fourth of a teaspoon
  • Cayenne pepper- one eighth or one fourth of a teaspoon
  • Chicken breasts- two (diced)
  • Full of fat coconut milk- one can, or thirteen and a half ounces
  • Water- three fourths of a cup
  • Chicken stock- one half of a cup
  • Swerve- three teaspoons
  • Fish sauce- one and a half tablespoons
  • Liquid aminos- two teaspoons
  • Limes- two (juice)

The first step in making this dish is adding the coconut oil to a pan. This pan should be heated over a high or a medium heat. Next, add the pepper into this coconut oil until these peppers are soft. The peppers should take about three minutes until they are soft. Remove the coconut oil and peppers from the pan.

The second step in making the Thai curry is adding more coconut oil to the pan. Next, add the onion to the coconut oil. Cook the onions for about five minutes. Next add in the garlic, lime zest, ginger, cayenne pepper, green chili, and cumin. Cook this mixture all together until all of the ingredients is a light, golden brown. To get the desired color, it will take about five minutes to cook.

The third step is adding the chicken. The chicken should be fully cooked when done, but be sure not to overcook it. The chicken should still be tender, however. After the chicken is fully cooked, add the peppers, coconut milk, water, stock, sweetener, fish sauce, liquid aminos, and lime juice. Allow this to simmer together for fifteen minutes, remembering to stir frequently.
