Easy Vegetarian Meal Prep For One Week

This vegetarian meal prep for an entire week is so easy. Lunches consist of yummy vegetarian yellow curry, vegetable stir fry with sweet potatoes, and brown rice. Breakfasts include protein overnight oats with berries, apples, and chia seeds. Snacks are protein power balls, homemade hummus, and veggies.

and today I am showing you what I have done for a week of meal prep

So this is the end result of a typical meal prep for my boyfriend and I who I prep for

mainly the work week. So what I have here today is I have some stir fry on this side on top of brown rice and

sweet potato and then I also have veggie curry with veggies, raw veggies on the side and on

top of brown rice. So four of each of those. I have some overnight oats and what those consist of is oatmeal, powdered peanut butter

vanilla protein powder, chia seeds, diced apples and berries. So I have four of those and then I have just some sliced veggies for the week, just some snacks

So I make a video just on how to make this homemade hummus which is delicious I might

add and people have been telling me it's better than the store bought. I'm not trying to toot my own horn but just saying you know it's going in there, it's

easy and it's cheaper. And then the last thing I have here is our energy balls which are a huge hit

They're super easy, good quick snack or like post workout snack and those just have oatmeal

powdered peanut butter, vanilla protein powder and almond milk and banana for the sweetener

So I try not to use any sweetener or like sugar in any of my recipes

I like to use fruit as sweeteners. I do use a little bit of stevia or monk fruit but the main thing is I try to be as healthy

and as plant based as possible. And again I don't think I mentioned but all of these are vegetarian

You can do any of these recipes with chicken or steak or anything like that but because

I am a vegetarian I just do all of them without meat

I feel like they have the same flavor as you know the ones with chicken curry it's just

as good. But I am a vegetarian just for health reasons so you can adapt them any way you can

order in. I allow for some of that so I realize that we're not going to be eating breakfast, lunch

and dinner from meal prep. So that's why I only do like breakfast and lunch is because I allow for us to order in

or even cook our own meal fresh that night. I just know that's what works for us

You just have to play with it and your family to be able to know what works

But the one thing I would mention is just play with it and don't feel like you have

to make this a ton of stuff and perfectly eat every single one each week just by experimentation
