Vegetarian Yellow Curry Recipe Half an onion (diced) Two cloves of garlic (minced) One tablespoon ginger powder Three tablespoons of curry powder One can light coconut milk One tablespoon tamari One diced sweet potato One cup cauliflower Two whole carrots (chopped) Half a green bell pepper (Chopped) Heat a pan to medium heat and pour in one tablespoon of olive oil. Add diced onion and saute. Once they are translucent, add garlic, ginger, and curry powder. Let saute for one minute. Pour in one can of light coconut milk. Add tamari and let simmer. Stir in diced sweet potato, cauliflower, cauliflower, carrots, and green bell pepper. Put on the lid and let simmer for about five to ten minutes or until vegetables are tender.
